Our Impression: We love Dupont Saison, probably the most classically referenced beer in the saison category. What many may not know is that their yeast can be very finicky to work with and many breweries shy away from their yeast strain because they are not dependable om a production environment. We, however, have embraced this yeast and have given it everything it needs to work within our process. In our opinion, there really is no substitute if you are looking for the funky complexity and elegance found in Dupont Saison. We plan to keep this beer around as a Belgian-style seasonal.
Aroma: Ripe pear, pepper, and vinuous green grapes.
Appearance: Saison du Blanc pours a beautiful gold color with just a hint of cloudiness. A lovely white foam emerges with medium carbonation.
Flavor: The traditional saison flavor profile emerges with ripe fruit and mild phenolics. An impression of sweetness fades with a dry finish. A generous hot side hop addition of Hallertau Blanc lends a really nice white wine(ish) character which sits perfectly in the style.
Mouthfeel: Medium-light mouthfeel, with medium carbonation.
