Our Impression: As a brewer, it is sometimes necessary to appease the demographic of beer drinkers who want a beer that doesn’t taste like beer.  This can lead to gimmicky beers with crazy names and odd ingredients and flavors.  We try not to forget that there is still a beer style underneath all the added adjuncts. (Adjuncts = Anything not water, malt, hops, yeast).  We decided to brew something that inspires us and also something that attracts beer drinkers and non-beer drinkers alike!  The base beer, a Belgian-style Witbier, is an elegant, light-colored wheat beer brewed with belgian ale yeast.  We brewed the witbier with raw wheat, belgian malts, and a long, traditional decoction mash.  The result is very pale, dry, doughy witbier with low hop character and complex belgian esters. Even though some of the fine subtleties are lost behind the hefty dose of raspberries, this product has been elevated into something truly special.  We love Mr. Bear and hope you do too!

Style: Raspberry Witbier, BJCP 29A

Grain: Pilsner

Hops: Hallertau Mittelfruh

Yeast:  Belgian Abbey Yeast

Adjuncts: Raw Wheat, Whole Raspberries

Water: Reverse Osmosis Base with light additions of CaSO4, CaCl2 

Original Gravity:  12.5 Degrees Plato

ABV: 5.5%

Estimated IBU:  16 IBU

Color: 3 SRM

Aroma: Tart Fresh Raspberry with doughy malt sweetness.
Appearance: Pours deep fuschia from the generous raspberry addition, and moderately cloudy from the wheat. A tantalizing pink foam forms on top of Mr. Bear.

Flavor: Tart, fresh raspberry is the star in this beer.  It melds wonderfully with the slightly tart, doughy character of the base beer, a Belgian-style witbier.  Elegant, refreshing, fun, and handsome; Mr. Bear is your perfect patio friend! 
Mouthfeel: Light body with gentle mouthwatering acidity, medium mouthfeel, and medium carbonation.
